This Week's Review and Giveaway: Bite Me: A Stomach Satisfying, Visually Gratifying, Fresh-Mouthed CookbookWhen sisters Julie Albert and Lisa Gnat self-published Bite Me: A Stomach Satisfying, Visually Gratifying, Fresh-Mouthed Cookbook, it didn't take long before Chapters Indigo came knocking on their door, asking for exclusive rights to sell their cookbook over the holiday season. So when I received my own copy to review, I was pretty excited. This large print, colourful and easily readable cookbook was on my list of ones to check out. And check it out I did.
Filled with larger than life quirky photos, a little bit of cheeky sass and some playful quotes, Lisa and Julie had me giggling while I drooled over page upon page of family friendly and completely doable recipes, (175 to be exact), that embrace the use of fresh, wholesome and (mostly) healthy ingredients. I also liked that a large majority of the ingredients required to make their dishes are readily available in your every day supermarket and that the instructions for creating each recipe is in a step by step, easy to follow format.
Here at Can I get the Recipe? we featured three fabulous recipes from Bite Me and all three turned out to be well received by my family. First up, the Tofu Pad Thai with Sweet Chili Sauce had just the right amount of sweetness of the chili sauce tied to the sourness of the lime as well as a great balalnce of traditional ingredients to make this dish authentic. It was also easy enough to keep certain parts of the meal seperate (ie the noodles, the tofu pieces and the egg) so that my oldest, doesn't-like-things-mixed-up eater, also enjoyed the meal.
Next, the Chicken and Vegetable Lo Mein was not only super delicious, but also super fast to create as already cooked deli roasted chicken breast was used for the main ingredient. I've made this dish twice now and the second time round, I didn't have bok choy or red bell peppers on hand so I substituted broccoli instead and the meal was again a huge hit.
Finally, the Chicken and Balsamic Peppers was a fabulous combination of crispy yet healthy baked chicken with perfectly sauteed peppers and the adults in the group enjoyed it greatly. The kids, on the other hand, weren't too keen on the balsamic peppers, most likely because of the tinge of vinegar, but they devoured the chicken so I would definitely make this dish again but maybe add some steamed vegetables on the side for the boys.There are so many other great recipes in this cookbook that I can't wait to try out. On the top of my list: Coconut Shrimp, Sticky Wings, Meatloaf with Mushroom Gravy, Tomato Soup with Grilled Cheese Croutons, Apple Streusel Muffins, and more. We did try the Chewy Chocolate Cookies...yum!! Sorry, if you want the recipe for them, you're going to have to buy the book!
